Learn to make traditional farmer’s style saké/rice ale, ‘doburoku’

In this demonstration/lecture workshop, Chef Koichi and Yoshinori will
introduce participants to the craft of preparing saké from rice.
Everyone will get to take the starter kit home to watch and tend as it
ferments.

Topics covered:

  • Equipment sanitization
  • Rice – grades, washing, soaking, and steaming
  • Ingredients – koji, saké kasu vs. kusare moto vs. dry yeast
  • Fermentation – what is it, monitoring and adjusting for taste
  • Finishing up – squeezing and filtering saké
  • How to use leftover saké kasu in other recipes
  • Class includes saké-making ‘starter kit’ so you can get brewing right away!

About the Instructors:
Chef Koichi Suzuki
Food shared with family and friends has long been a passion for
Koichi. As an accomplished professional chef, variety and spontaneity
are a couple of his key ingredients. Prior to moving to Vancouver,
Canada, Koichi lived in Australia and the United States. A native of
Tokyo, Japan, he has always valued his culture’s appreciation for
food. Now, as a loving father and husband, he is even more conscious
with what his family eats and hopes his approach to food will
enlighten your way of life.

Yoshinori Tanaka
Yoshinori has had rice farming in his blood for generations.  His
childhood memories of mud mucking, rice planting and firefly chasing
in his grandparents’ rice paddy have grown into an enthusiasm for
traditional Japanese homemaking, and now rice fermentation.  Since
immigrating to Canada, his passion for his own roots has continued to
grow as he shares them with new friends and a growing community of
urban homesteaders.  Yoshinori is also a professional photographer,
proud father, and connoisseur of delicious, healthy foods – with
Japanese twist.
