The benefits of spicy greens…
In addition to being anti-oxidant-rich, the spicy greens- watercress, arugula and mustard greens; function to clear heat from the body and dispel excess mucus from the lungs. When the summer starts to heat up and allergy season is upon us, there is no better, cleansing and refreshing soup!
This is an easy, quick and refreshing summer soup. Serve as an appetizer or with a salad for lunch. No cooking necessary!
makes about 1.5 liters or 6 servings
1 cucumber (if using English cucumber, use the whole thing. If it is a field cucumber, peel it first)
1 green onion
1 bunch watercress
1 bunch arugula or mustard greens
about 1 liter filtered cold water
1 lemon, juice and zest
Salt to taste
Simply put all into the blender and puree until smooth, adding water until desired thickness.
Pour into chilled bowls and garnish with salsa and some ice cubes if desired.
This is best eaten fresh.
