I invite you to try out this simply, refreshing way to enjoy our rainbow ‘kraut!
Here’s what you need:
1 handful pea shoots, buckwheat sprouts or any other sprout you like. I get mine from the farmer’s markets from The Food Pedalers.
1 carrot, use your peeler to make ‘noodles’. Or try it with daikon radish, cucumber or zucchini instead.
1 free-range , organic egg (boil water with a touch of vinegar or sauerkraut juice and poach for 2 min or so, to your preferred doneness)
To put this quick, light meal together, simply:
1) Make pesto (or add some good-quality store-bought stuff). I made cilantro pesto in this photo.
2)Boil water to poach your egg.
3) Poach egg and assemble veggies in bowl.
4) Make a ‘nest’ with the sprouts and veggies. Add the sauerkraut and gently lay the egg on top. Top off with cilantro.
